What is gram ghughni?
Chana Ghughni is a traditional Bihari dish. Which is made from black gram. This dish is very much liked especially in Bihar, Jharkhand and eastern Uttar Pradesh. From morning breakfast to evening tea, it can be eaten at any time. This dish is tasty as well as filling stomach.
1. First soak black gram in water overnight.
2. The next morning wash them and boil them for 4-5 whistles in the pressure cooker. Keep in mind that the gram should not be melted too much.
3. Heat oil in a pan, add cumin and bay leaf.
4. Now add finely chopped onions and fry until it becomes golden.
5. After this, add ginger-garlic paste and green chili. Cook for 1-2 minutes.
6. Now add all dry spices (turmeric, coriander, cumin, red chili). If you want, add some water so that the spices do not burn.
7. Now add tomatoes and cook until it becomes soft.
8. After that add boiled gram, mix well. Add salt to taste.
9. Cook on low flame for 5-7 minutes so that the spices mix well in gram.
10. Finally add garam masala, mix and turn off the gas.
How to serve?
1. Remove the ghughni in a plate, add finely chopped coriander and lemon juice on top.
2. Serve with onion and green chillies.
3. To bring a little crunch, you can also add potato bhujia from above.
4. Eat it with tea – Its taste doubles during the rainy season.
