Material:
For stuffing:
2. boiled potatoes – 2
3. Paneer – 1/2 cup (grated)
4. Cashew – 2 teaspoons (chopped)
5. Raisins – 1 teaspoon
6. Green capsicum – 2 teaspoons (finely chopped)
7. Garlic – 1 teaspoon (crushed)
8. Asafoetida – A pinch
9. Salt, turmeric, red chili, coriander powder, cumin powder – according to taste
10. Garam Masala – 1/2 teaspoon
11. Green Coriander – 2 teaspoons (chopped)
12. A little sugar – to balance taste
13. A little oil – for roasted
1. onion – 1 large (cut and make paste)
2. Cashew-8-10 (Grind with onion)
3. Garlic – 1 teaspoon
4. Asafoetida – A pinch
5. Cumin – 1/2 teaspoon
6. Kasuri Methi – 1/2 teaspoon
7. Slight sugar – according to taste
8. Green Coriander – To decorate
9. Little Water – For Gravy
Method of preparation:
Prepare stuffing:
1. First cut the tomatoes lightly and remove the inner part of it. It will be used in mawa stuffing.
2. Heat some oil in a pan.
3. Add garlic, asafoetida, capsicum, cashew and raisins and fry it lightly.
4. Now add mawa extracted from tomatoes.
5. Then add spices like turmeric, chilli, coriander, cumin, garam masala and salt.
6. Add some water so that the spices do not burn.
7. Now mash boiled potatoes and add it.
8. Add cheese, sugar and green coriander and mix everything well.
9. Let the stuffing cool slightly.
1. Fill the stuffing prepared in all tomatoes.
2. Put a little oil in a pan and cook these tomatoes for 5 minutes.
1. Put some more oil in the same pan.
2. Add cumin, asafoetida and garlic.
3. Now add onion and cashew paste and fry lightly.
4. Add the remaining stuffing to it.
5. Now add salt, turmeric, chili, and some water.
6. Finally add sugar, kasoori fenugreek and green coriander and mix.
How to serve:
Now put the prepared gravy in a serving plate. Place stuffed tomatoes over it and sprinkle a little cheese and green coriander over it. Serve with hot flowers, parathas or roti.
Note: If you want, you can make it more rich by increasing the amount of dry fruits in it. This dish is perfect for a special occasion of party or festival.
