1. Kutki Kheer
Kutki i.e. small millet, from which kheer was once considered a special dish of winter. Jaggery, milk and desi ghee were used in it. Light in taste and heavy in health, this kheer kept the body warm from inside. Today, rice or semolina pudding has become common, but no one else is taste like kutki kheer.
This special dish of Rampur is the hallmark of Mughal taste. It contains rich gravy made of cashew, poppy seeds, spices and curd. Earlier this dish was made only on a special occasion, now it has become difficult to find it even in hotels. Its fragrance and taste eater gives royal feeling.
4. Bedu Bread
This sweet roti made in Garhwal and Kumaon areas of Uttarakhand was definitely made on festivals. This roti prepared with jaggery, sesame and wheat flour used to make a place in memories with special sweetness. Today this traditional cuisine is limited to mountainous areas only.
